Ingredients

  • 1 lb lean ground beef (90% lean or higher)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups chopped romaine lettuce
  • 1 large tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup dill pickle slices
  • For the Special Sauce: 1/4 cup plain Greek yogurt
  • 2 tablespoons ketchup (no sugar added)
  • 1 tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar

Instructions

  1. In a bowl, mix the ground beef with salt and pepper. Form into four small patties.
  2. Heat olive oil in a skillet over medium-high heat. Cook the patties for 4-5 minutes per side, until done to your preference. Remove from heat.
  3. While the beef cooks, prepare the sauce: whisk together Greek yogurt, no-sugar-added ketchup, mustard, and apple cider vinegar in a small bowl.
  4. Assemble the bowls: divide the lettuce among four bowls. Top with the cooked burger patties.
  5. Arrange the diced tomato, sliced red onion, and pickle slices around the patties.
  6. Drizzle the special sauce over the bowls before serving.

Notes

  • You can substitute ground turkey or chicken for the beef.
