  • 1/2 cup rolled oats
  • 1/4 cup brown sugar

  • 1 large egg
  • 3 medium apples, peeled, cored, and diced
  • 1/4 cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8×8 inch baking pan.
  2. In a medium bowl, combine the whole wheat flour, rolled oats, brown sugar, baking soda, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Whisk the egg lightly and mix it into the flour mixture until a dough forms. Press two-thirds of the dough evenly into the bottom of the prepared pan.
  5. In a separate bowl, mix the diced apples, maple syrup, cinnamon, nutmeg, and lemon juice.
  6. Spread the apple mixture evenly over the crust in the pan.
  7. Crumble the remaining one-third of the dough over the apple layer.
  8. Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the bars cool completely in the pan before cutting into squares.
