- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow onion, cut into 1-inch pieces
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat. Let it marinate for 20 minutes.
- Thread the marinated chicken, red bell pepper pieces, and onion pieces alternately onto the skewers.
- Preheat your grill to medium-high heat.
- Place the skewers on the hot grill.
- Grill for 10 to 12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and serve immediately.
Notes
- You can substitute vegetables like zucchini or cherry tomatoes.
- For extra flavor, brush the skewers with a little extra marinade during the last few minutes of grilling.
