Description

A light, vegetable-based soup inspired by French cleansing recipes.


Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 leek, white and light green parts only, sliced
  • 4 cups vegetable broth
  • 1 cup chopped cabbage
  • 1 cup chopped zucchini
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add leek and cook for 2 more minutes.
  4. Pour in vegetable broth. Bring to a simmer.
  5. Add cabbage, zucchini, and thyme.
  6. Simmer until all vegetables are tender, about 15-20 minutes.
  7. Season with salt and pepper before serving.

Notes

  • For a smoother texture, blend half the soup before returning it to the pot.
  • You can add a handful of fresh parsley at the end for color.
