Description
A light, vegetable-based soup inspired by French cleansing recipes.
Ingredients

- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 leek, white and light green parts only, sliced
- 4 cups vegetable broth
- 1 cup chopped cabbage
- 1 cup chopped zucchini
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add leek and cook for 2 more minutes.
- Pour in vegetable broth. Bring to a simmer.
- Add cabbage, zucchini, and thyme.
- Simmer until all vegetables are tender, about 15-20 minutes.
- Season with salt and pepper before serving.
Notes
- For a smoother texture, blend half the soup before returning it to the pot.
- You can add a handful of fresh parsley at the end for color.
