Ingredients

  • 1 pound fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
  2. Cook the fettuccine according to package directions until al dente. Drain the pasta and set it aside.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, salt, pepper, and garlic powder. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring occasionally. Reduce the heat to low.
  6. Gradually whisk in the Parmesan cheese until the sauce is smooth. Do not let the sauce boil after adding the cheese.
  7. Stir the cooked chicken and the drained fettuccine into the Alfredo sauce until everything is coated.
  8. Transfer the pasta mixture to the prepared baking dish.
  9. Top the mixture evenly with the mozzarella and provolone cheeses.
  10. Bake for 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  11. Let the bake rest for 5 minutes before serving.

Notes

  • For a richer flavor, use fresh grated Parmesan cheese instead of pre-shredded.
  • You can add 1 cup of steamed broccoli florets along with the chicken for extra vegetables.
