Description

A quick recipe for preparing classic Kung Pao Chicken at home.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1/2 cup unsalted peanuts
  • 1/2 cup dried red chili peppers, cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

Instructions

  1. In a bowl, toss the chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Set aside for 10 minutes.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the peanuts and cook until lightly browned, about 2 minutes. Remove peanuts and set aside.
  3. Add the chili peppers to the wok and stir-fry for 30 seconds until fragrant. Do not burn.
  4. Add the minced garlic and ginger to the wok and cook for 30 seconds more.
  5. Add the marinated chicken to the wok and cook until browned and cooked through, about 5-7 minutes.
  6. In a small bowl, whisk together the chicken broth, 2 tablespoons of soy sauce, rice vinegar, sugar, and sesame oil. Pour this mixture over the chicken.
  7. Bring the sauce to a simmer. Stir the cornstarch slurry and pour it into the wok. Stir constantly until the sauce thickens.
  8. Return the peanuts to the wok and toss everything together. Serve immediately.
