A simple recipe for flavorful beef burrito bowls suitable for a family meal.

- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 ounce) taco seasoning mix
- 1 cup water
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 4 cups cooked rice (white or brown)
- Toppings: shredded lettuce, diced tomatoes, shredded cheese, salsa, sour cream
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain excess fat.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add taco seasoning and water to the skillet. Bring to a simmer and cook for 5 to 7 minutes, stirring occasionally, until the liquid has mostly reduced.
- Stir in the rinsed black beans and drained corn. Cook for 2 more minutes until heated through.
- Divide the cooked rice among four bowls.
- Spoon the seasoned beef mixture over the rice in each bowl.
- Top each bowl with your desired amount of lettuce, tomatoes, cheese, salsa, and sour cream.
Notes
- You can substitute ground turkey or chicken for the ground beef.
- For a spicier flavor, add 1/4 teaspoon of cayenne pepper with the taco seasoning.
- Prepare the rice ahead of time to reduce total preparation time.
