Description

A simple recipe for flavorful beef burrito bowls suitable for a family meal.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 4 cups cooked rice (white or brown)
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, salsa, sour cream

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  2. Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain excess fat.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add taco seasoning and water to the skillet. Bring to a simmer and cook for 5 to 7 minutes, stirring occasionally, until the liquid has mostly reduced.
  5. Stir in the rinsed black beans and drained corn. Cook for 2 more minutes until heated through.
  6. Divide the cooked rice among four bowls.
  7. Spoon the seasoned beef mixture over the rice in each bowl.
  8. Top each bowl with your desired amount of lettuce, tomatoes, cheese, salsa, and sour cream.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • For a spicier flavor, add 1/4 teaspoon of cayenne pepper with the taco seasoning.
