A quick, no-bake cookie recipe using chocolate, peanut butter, and crispy rice cereal.

- 1 cup semi-sweet chocolate chips
- 1 cup peanut butter
- 1/2 cup butter or margarine
- 1 teaspoon vanilla extract
- 4 cups crispy rice cereal
Instructions
- Line a baking sheet with parchment paper.
- Combine chocolate chips, peanut butter, and butter in a medium saucepan.
- Heat over low heat, stirring constantly until the mixture is completely melted and smooth. Do not boil.
- Remove the pan from the heat and stir in the vanilla extract.
- Fold in the crispy rice cereal until it is evenly coated with the chocolate mixture.
- Drop rounded tablespoons of the mixture onto the prepared baking sheet.
- Let the cookies set at room temperature or chill in the refrigerator for about 30 minutes until firm.
Notes
- For a different flavor, substitute milk chocolate or dark chocolate chips.
- If the mixture thickens too much while mixing, return it to low heat briefly to soften.
