  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 pound fresh strawberries, sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined.
  6. Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes cool, prepare the cream: Beat the heavy whipping cream and powdered sugar together until stiff peaks form.
  9. Once the cakes are cool, place one layer on a serving plate. Spread half of the whipped cream over the first layer and top with half of the sliced strawberries.
  10. Place the second cake layer on top. Cover the top and sides of the cake with the remaining whipped cream. Arrange the remaining strawberries on top.
  11. Chill the cake for at least 30 minutes before slicing and serving.

Notes

  • For a more stable cream, chill your mixing bowl and whisk attachment before whipping the cream.
  • You can soak the strawberries briefly in a tablespoon of sugar for extra juice before layering.
