Ingredients

  • 8 oz dried soba noodles
  • 4 cups vegetable broth
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup shredded carrots
  • 1 cup chopped spinach
  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions

  1. Cook soba noodles according to package directions. Drain and set aside.
  2. In a medium saucepan, combine vegetable broth, soy sauce, rice vinegar, sesame oil, ginger, and garlic. Bring to a simmer over medium heat.
  3. Add mushrooms and carrots to the simmering broth. Cook for 5 minutes until slightly tender.
  4. Stir in spinach and cook until wilted, about 1 minute.
  5. Divide the cooked soba noodles among serving bowls.
  6. Ladle the hot broth and vegetable mixture over the noodles.
  7. Garnish with sliced green onions and sesame seeds before serving.
