- 8 oz dried soba noodles
- 4 cups vegetable broth
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 1 cup shredded carrots
- 1 cup chopped spinach
- 2 green onions, sliced for garnish
- Sesame seeds for garnish
Instructions
- Cook soba noodles according to package directions. Drain and set aside.
- In a medium saucepan, combine vegetable broth, soy sauce, rice vinegar, sesame oil, ginger, and garlic. Bring to a simmer over medium heat.
- Add mushrooms and carrots to the simmering broth. Cook for 5 minutes until slightly tender.
- Stir in spinach and cook until wilted, about 1 minute.
- Divide the cooked soba noodles among serving bowls.
- Ladle the hot broth and vegetable mixture over the noodles.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- You can add cooked tofu or chicken for extra protein.
- Adjust soy sauce amount based on your preference for saltiness.
