Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, thinly sliced
  • 1/2 cup snow peas
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth
  • 1 tablespoon honey
  • 1 teaspoon sesame oil

Instructions

  1. In a bowl, toss the chicken pieces with soy sauce and cornstarch. Set aside for 5 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add broccoli, bell pepper, and carrot to the skillet. Stir fry for 3 minutes until slightly tender.
  5. Add snow peas, garlic, and ginger to the skillet. Cook for 1 minute more.
  6. In a small bowl, whisk together chicken broth and honey.
  7. Return the chicken to the skillet. Pour the broth mixture over the chicken and vegetables.
  8. Cook, stirring constantly, until the sauce thickens, about 2 minutes.
  9. Remove from heat and stir in sesame oil. Serve immediately.
