A simple recipe for making quick and satisfying chicken quesadillas.
Ingredients

- 2 cups cooked, shredded chicken
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon butter or oil
Instructions
- Heat a large skillet over medium heat.
- Place one tortilla in the skillet.
- Sprinkle half of the cheese mixture over the tortilla.
- Distribute half of the shredded chicken evenly over the cheese.
- Top with another tortilla.
- Cook for 3 to 4 minutes per side, pressing gently with a spatula, until the cheese melts and the tortillas are golden brown.
- Remove from the skillet and repeat with the remaining ingredients.
- Cut each quesadilla into wedges before serving.
Notes
- You can use leftover rotisserie chicken for faster preparation.
- Add a dash of cumin or chili powder to the chicken for extra flavor.
- Serve with salsa, sour cream, or guacamole.
