- 1/2 cup unsalted butter, melted
- 1 cup erythritol or preferred sugar substitute
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/4 cup almond flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup sugar free chocolate chips
- 1/2 teaspoon peppermint extract
- 2 tablespoons crushed sugar free peppermint candies (optional topping)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, whisk together the melted butter and sugar substitute until combined.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the cocoa powder, almond flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the sugar free chocolate chips.
- Spread the batter evenly into the prepared baking pan.
- Bake for 20 to 25 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
- Remove from the oven and let cool completely in the pan on a wire rack.
- Once cool, sprinkle the top with crushed sugar free peppermint candies, if using.
- Lift the brownies out of the pan using the parchment overhang and cut into 16 squares.
Notes
- For a fudgier texture, slightly underbake the brownies.
- If you do not use peppermint extract in the batter, you can use it to make a simple glaze with powdered sugar substitute and water to drizzle on top.
