Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup erythritol or preferred sugar substitute
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup sugar free chocolate chips
  • 1/2 teaspoon peppermint extract
  • 2 tablespoons crushed sugar free peppermint candies (optional topping)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the melted butter and sugar substitute until combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, almond flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the sugar free chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 20 to 25 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
  9. Remove from the oven and let cool completely in the pan on a wire rack.
  10. Once cool, sprinkle the top with crushed sugar free peppermint candies, if using.
  11. Lift the brownies out of the pan using the parchment overhang and cut into 16 squares.

Notes

  • For a fudgier texture, slightly underbake the brownies.
  • If you do not use peppermint extract in the batter, you can use it to make a simple glaze with powdered sugar substitute and water to drizzle on top.
