- 1/4 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 cups unsweetened non-dairy milk (almond or soy recommended)
- 2 tablespoons dairy-free butter substitute
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, whisk together the cocoa powder, sugar, cornstarch, and salt.
- Gradually whisk in the non-dairy milk until the mixture is smooth.
- Place the saucepan over medium heat. Stir constantly until the mixture thickens and begins to bubble.
- Reduce the heat to low and cook for 1 minute, stirring continuously.
- Remove the saucepan from the heat. Stir in the dairy-free butter substitute and vanilla extract until combined.
- Pour the pudding into individual serving dishes.
- Cover the surface of each pudding with plastic wrap to prevent a skin from forming.
- Chill in the refrigerator for at least 2 hours, or until firm.
Notes
- Use full-fat non-dairy milk for a richer texture.
- For a deeper chocolate flavor, use dark cocoa powder.
