Simple recipe for making sweet potatoes crispy when roasted.

- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Wash and peel the sweet potatoes.
- Cut the sweet potatoes into uniform 1-inch cubes.
- Place the sweet potato cubes in a large bowl.
- Drizzle the olive oil over the cubes and toss to coat evenly.
- Sprinkle the salt, pepper, and paprika over the potatoes and toss again.
- Spread the seasoned sweet potatoes in a single layer on a baking sheet. Do not overcrowd the pan.
- Roast for 20 minutes.
- Remove the pan from the oven and flip the potatoes.
- Return the pan to the oven and roast for another 10 to 15 minutes, or until they are tender inside and crispy outside.
- Serve immediately.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes before drying them thoroughly.
- Use parchment paper on the baking sheet for easier cleanup.
