Description

  • 1 lb fresh anchovies, cleaned and gutted
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • Lemon wedges, for serving

Instructions

  1. Rinse the cleaned anchovies under cold water and pat them completely dry with paper towels.
  2. In a shallow dish, mix the flour, salt, and pepper.
  3. Dredge each anchovy in the flour mixture, shaking off any excess.
  4. Pour enough vegetable oil into a large skillet to reach about 1/2 inch depth. Heat the oil over medium-high heat until it shimmers (about 350°F or 175°C).
  5. Carefully place the floured anchovies in the hot oil in a single layer, avoiding overcrowding the pan.
  6. Fry for 2 to 3 minutes per side until golden brown and crispy.
  7. Remove the anchovies with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Repeat with the remaining fish.
  9. Serve immediately with fresh lemon wedges.

Notes

  • Make sure the anchovies are very dry before flouring; this helps achieve maximum crispiness.
  • Do not let the oil temperature drop too low, or the fish will absorb too much oil and become greasy.
