A simple and comforting dish featuring creamy butter beans in a rich tomato sauce.

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can butter beans, rinsed and drained
- 1/2 cup vegetable broth
- 1/4 cup heavy cream
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and cook until soft, about 5 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the diced tomatoes, butter beans, vegetable broth, oregano, salt, and pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, allowing flavors to meld.
- Remove the lid and stir in the heavy cream. Cook for another 2-3 minutes until the sauce thickens slightly. Do not boil after adding cream.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
- For a thicker sauce, mash about one quarter of the beans against the side of the pan before adding the cream.
- You can substitute cannellini beans for butter beans if necessary.
