Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can butter beans, rinsed and drained
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the diced tomatoes, butter beans, vegetable broth, oregano, salt, and pepper.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, allowing flavors to meld.
  6. Remove the lid and stir in the heavy cream. Cook for another 2-3 minutes until the sauce thickens slightly. Do not boil after adding cream.
  7. Taste and adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker sauce, mash about one quarter of the beans against the side of the pan before adding the cream.
  • You can substitute cannellini beans for butter beans if necessary.
