  • 1 lb large shrimp, peeled and deveined
  • 1 lb pasta (fettuccine or linguine recommended)
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, minced (remove seeds for less heat)
  • 1 teaspoon dried thyme
  • 1 teaspoon curry powder
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup of the pasta water before draining.
  2. While pasta cooks, season shrimp lightly with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3 minutes.
  4. Add garlic, scotch bonnet pepper, thyme, curry powder, allspice, and nutmeg. Cook for 1 minute until fragrant.
  5. Add shrimp to the skillet. Cook for 2-3 minutes per side until pink and cooked through. Remove shrimp from the skillet and set aside.
  6. Pour chicken broth into the skillet and scrape up any browned bits from the bottom. Let it simmer for 1 minute.
  7. Reduce heat to low. Stir in heavy cream and Parmesan cheese. Stir constantly until the sauce thickens slightly.
  8. Add the drained pasta to the sauce. Toss to coat. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until desired consistency is reached.
  9. Return the cooked shrimp to the skillet. Toss gently to combine and heat through.
  10. Season with salt and pepper as needed. Garnish with fresh parsley before serving.

Notes

  • For a milder flavor, use half a jalapeño instead of a scotch bonnet pepper.
  • You can substitute heavy cream with evaporated milk for a slightly lighter sauce.
