  • 2 cloves garlic, minced

  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh lemon juice
  • 1/2 cup olive oil
  • 1/4 cup vegetable oil
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons anchovy paste (optional)

Instructions

  1. Place egg yolks, garlic, Dijon mustard, Worcestershire sauce, salt, and pepper in a medium bowl. Whisk until combined.
  2. Slowly add the lemon juice while continuously whisking.
  3. Begin adding the olive oil and vegetable oil, one teaspoon at a time, whisking constantly until the mixture emulsifies and thickens.
  4. Once thickened, slowly whisk in the grated Parmesan cheese and anchovy paste, if using.
  5. Taste and adjust seasoning if needed.

Notes

  • If you prefer a thinner dressing, add one tablespoon of water at the end.
  • You can substitute mayonnaise for the egg yolks for a quicker, safer option.
