  • 1 cup semi-pearled farro
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the farro, reduce heat, cover, and simmer for 20 minutes until tender but still slightly chewy. Drain any excess liquid.
  3. While the farro cooks, heat the olive oil in an oven-safe skillet over medium heat. Add the mushrooms and cook until they release their liquid and start to brown, about 8 minutes.
  4. Add the diced onion to the skillet and cook until softened, about 5 minutes.
  5. Stir in the minced garlic and fresh thyme, cooking for 1 minute until fragrant.
  6. Remove the skillet from the heat. Stir in the cooked farro, salt, and pepper.
  7. If using, sprinkle the Parmesan cheese over the top.
  8. Bake for 10 minutes until heated through and the top is slightly golden.

Notes

  • You can substitute chicken broth for vegetable broth if desired.
  • For a richer flavor, use a mix of wild mushrooms.
