A basic recipe for a light salad dressing using coconut oil.
Ingredients

- 1/4 cup coconut oil, melted
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon maple syrup
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Combine the melted coconut oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper in a small bowl.
- Whisk the ingredients together until the dressing is well combined and slightly emulsified.
- If the dressing separates, whisk again before serving.
- Pour the dressing over your salad greens.
Notes
- If you prefer a thinner dressing, add 1 teaspoon of water.
- Use refined coconut oil if you do not want a strong coconut flavor.
