- 1 cup granulated sugar, plus 1/4 cup for coating

Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small, shallow dish, mix the remaining 1/4 cup sugar and 2 teaspoons cinnamon for rolling.
- Roll the dough into 1-inch balls. Roll each ball in the cinnamon sugar mixture until fully coated.
- Place the coated dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 8 to 10 minutes, or until the edges are lightly set. Do not overbake.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger cinnamon flavor, increase the cinnamon in the dough to 3 teaspoons.
- You can chill the dough for 30 minutes before rolling if your dough is too soft.
