A simple recipe for a moist coffee cake with a chocolate chip swirl.

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup semi-sweet chocolate chips
- 1/2 cup packed brown sugar (for topping)
- 1/4 cup all-purpose flour (for topping)
- 1/4 cup cold unsalted butter, cut into small pieces (for topping)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
- Gently fold in the chocolate chips.
- Pour half of the batter into the prepared cake pan. Sprinkle half of the chocolate chips over the batter. Top with the remaining batter.
- Prepare the streusel topping: In a small bowl, combine the brown sugar and 1/4 cup flour. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Sprinkle the streusel topping evenly over the cake batter.
- Bake for 40 to 45 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- You can substitute milk chocolate chips for semi-sweet if you prefer a sweeter cake.
- For extra flavor, add 1/2 teaspoon of ground cinnamon to the streusel topping mixture.
