Description

A flavorful Indian curry featuring tender chicken pieces cooked in a rich, aromatic gravy.


Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1 tsp Kashmiri chili powder (or paprika for less heat)
  • 1/2 tsp garam masala
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup plain yogurt
  • 1 cup chicken broth
  • 1/2 cup chopped fresh tomatoes
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat the oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft and translucent, about 5-7 minutes.
  2. Add the ginger paste and garlic paste. Cook for 1 minute until fragrant.
  3. Stir in the cumin, coriander, turmeric, chili powder, garam masala, cardamom, and cloves. Cook the spices for 1 minute, stirring constantly.
  4. Add the chicken pieces to the pot and brown them lightly on all sides.
  5. In a separate bowl, whisk the yogurt until smooth. Reduce the heat to low and slowly whisk the yogurt into the chicken mixture to prevent curdling. Cook for 2 minutes.
  6. Pour in the chicken broth and add the chopped tomatoes and salt. Bring the mixture to a gentle simmer.
  7. Cover the pot, reduce the heat to low, and let it cook for 25-30 minutes, or until the chicken is tender and cooked through. Stir occasionally.
  8. If the gravy is too thick, add a little water or broth. If too thin, simmer uncovered for a few minutes to reduce.
  9. Taste and adjust salt if necessary.
  10. Garnish with fresh cilantro before serving.

Notes

  • For a deeper red color without excessive heat, use a good quality Kashmiri chili powder.
  • If you prefer a smoother sauce, you can blend the cooked onions and spices with a little liquid before adding the chicken.
  • Allowing the curry to rest for 15 minutes off the heat before serving often deepens the flavor.
