  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter (cubed)
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a saucepan, combine cherries, 1 cup sugar, cornstarch, and lemon juice. Cook over medium heat, stirring until the mixture thickens, about 5 to 7 minutes. Pour the cherry filling into the prepared baking dish.
  3. In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the milk until just combined; do not overmix.
  6. Drop spoonfuls of the batter evenly over the cherry filling.
  7. Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let cool slightly before serving.

Notes

  • If using frozen cherries, do not thaw them before cooking the filling.
  • Serve warm with vanilla ice cream or whipped cream.
