Description

A simple recipe for a moist carrot loaf cake.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix the granulated sugar, brown sugar, and vegetable oil until combined.
  4. Beat in the eggs one at a time. Stir in the vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Fold in the grated carrots.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For a richer flavor, you can add 1/2 cup of chopped walnuts or pecans with the carrots.
  • If you prefer a glaze, mix 1 cup powdered sugar with 2 tablespoons of milk and 1/2 teaspoon of vanilla extract. Drizzle over the cooled cake.
