A rich and decadent homemade caramel fudge recipe.
Ingredients
Scale
- 2 cups granulated sugar
- 1 cup unsalted butter
- 1 (12 ounce) can evaporated milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Grease an 8×8 inch baking pan.
- In a heavy-bottomed saucepan, combine sugar, butter, and evaporated milk.
- Cook over medium heat, stirring constantly, until butter is melted and sugar is dissolved.
- Bring the mixture to a boil, then reduce heat to low and simmer, stirring frequently, for 10-12 minutes, or until it reaches the soft-ball stage (235-240°F on a candy thermometer).
- Remove from heat and stir in vanilla extract and nuts, if using.
- Pour the mixture into the prepared baking pan.
- Let cool completely at room temperature, about 2-3 hours.
- Cut into squares and serve.
Notes
- For a smoother fudge, stir the mixture constantly while it cools slightly before pouring into the pan.
- Store fudge in an airtight container at room temperature for up to a week.
