Description

A quick and simple fried rice recipe suitable for Paleo and Whole30 diets, using cauliflower rice.


Ingredients

  • 2 cups cauliflower rice
  • 1 tablespoon coconut oil
  • 1/2 cup diced ham or crumbled sausage (ensure compliant)
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper (any color)
  • 2 large eggs
  • 1 tablespoon coconut aminos
  • 1/4 teaspoon ground black pepper
  • Pinch of sea salt

Instructions

  1. Heat coconut oil in a large skillet or wok over medium-high heat.
  2. Add diced ham or sausage and cook until lightly browned, about 3 minutes.
  3. Add onion and bell pepper to the skillet. Cook until vegetables soften, about 4 minutes.
  4. Push the cooked ingredients to one side of the skillet.
  5. Crack the eggs into the empty side of the skillet. Scramble the eggs until just set.
  6. Add the cauliflower rice to the skillet. Stir everything together.
  7. Cook for 5 to 7 minutes, stirring occasionally, until the cauliflower rice is heated through and slightly tender.
  8. Stir in coconut aminos, black pepper, and salt. Cook for 1 minute more.
  9. Serve immediately.

Notes

  • Use compliant sausage or ham to keep this recipe strictly Whole30.
  • For extra flavor, add 1/2 teaspoon of dried ginger powder with the vegetables.
  • If you prefer a softer texture, steam the cauliflower rice for 3 minutes before frying.
