Description

A simple, light soup featuring bok choy seasoned with fresh garlic and ginger.


Ingredients

  • 6 cups vegetable broth
  • 2 heads baby bok choy, trimmed and quartered
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper

Instructions

  1. Pour the vegetable broth into a medium pot and bring it to a boil over medium-high heat.
  2. Add the minced ginger and minced garlic to the boiling broth. Reduce the heat to medium and simmer for 5 minutes.
  3. Stir in the soy sauce and white pepper.
  4. Add the quartered bok choy to the pot. Cook for 3 to 5 minutes, until the bok choy is tender-crisp.
  5. Remove the pot from the heat. Stir in the sesame oil just before serving.
  6. Ladle the soup into bowls and serve hot.

Notes

  • You can add cooked shredded chicken or tofu for extra protein.
