Description

Simple recipe for sweet and tart blueberry crumble bars with a buttery crust and topping.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into pieces
  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the flour, oats, brown sugar, and salt for the crust/crumble.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan.
  5. In a separate bowl, gently toss the blueberries with the granulated sugar, cornstarch, and lemon juice.
  6. Spread the blueberry mixture evenly over the crust layer.
  7. Sprinkle the remaining one-third of the crumb mixture over the blueberries.
  8. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting into squares.

Notes

  • If using frozen blueberries, do not thaw them before mixing with the sugar and cornstarch.
  • For a richer flavor, substitute half of the all-purpose flour with whole wheat flour.
  • You can store leftover bars tightly covered at room temperature for up to three days.
