  • 3/4 cup granulated sugar
  • 1 large egg

  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/4 cup milk
  • For Streusel: 1/2 cup all-purpose flour
  • For Streusel: 1/4 cup packed brown sugar
  • For Streusel: 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the 1 3/4 cups flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the 1/2 cup softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Mix in the mashed bananas and milk until just blended.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Prepare the streusel: In a small bowl, combine the 1/2 cup flour and brown sugar. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  8. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  9. Sprinkle the streusel topping generously over the top of each muffin.
  10. Bake for 20 to 25 minutes, or until a wooden pick inserted into the center comes out clean.
  11. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

  • Use very ripe, spotty bananas for the best flavor and moisture.
