- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup crushed Oreo cookies, plus 6 whole Oreos for topping
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the melted butter, eggs, milk, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
- Fold in the 1 cup of crushed Oreo cookies.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Place one whole Oreo cookie half on top of the batter in each cup.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, you can substitute buttermilk for regular milk.
- Do not overmix the batter; this keeps your muffins tender.
- Crush the Oreos in a food processor or by placing them in a sealed bag and crushing them with a rolling pin.
