A simple recipe for baked eggs mixed with cottage cheese.

- 2 large eggs
- 1/2 cup cottage cheese
- 1 tablespoon chopped fresh chives
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon olive oil
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a small oven-safe dish with olive oil.
- In a small bowl, combine the cottage cheese, chopped chives, salt, and pepper. Mix well.
- Spread the cottage cheese mixture evenly into the bottom of the prepared dish.
- Carefully crack the two eggs on top of the cottage cheese mixture, keeping the yolks intact if possible.
- Bake for 15 to 18 minutes, or until the egg whites are set and the yolks reach your desired doneness.
- Remove from the oven and serve immediately.
Notes
- For a richer flavor, you can add a pinch of paprika before baking.
- Use small ramekins instead of one dish for individual servings.
