A fresh, creamy dressing made with avocado, cilantro, and lime juice.
Ingredients

- 1 ripe avocado
- 1/2 cup fresh cilantro leaves
- 1/4 cup fresh lime juice
- 1/4 cup water (or more for desired consistency)
- 2 tablespoons olive oil
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine the avocado, cilantro, lime juice, water, olive oil, garlic, salt, and pepper in a blender or food processor.
- Blend until completely smooth. Add more water, one tablespoon at a time, if you prefer a thinner dressing.
- Taste and adjust salt or lime juice as needed.
- Pour into an airtight container and refrigerate until ready to use.
Notes
- This dressing thickens slightly when chilled.
- For a tangier flavor, add a small piece of jalapeño without seeds.
