Description
Crispy potato pancakes made quickly in an air fryer.

- 2 large Russet potatoes, peeled
- 1 small onion, peeled
- 1 large egg
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil (for brushing)
Instructions
- Grate the potatoes and onion using the coarse side of a box grater.
- Place the grated mixture in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is important for crispiness.
- Transfer the dried potato and onion mixture to a medium bowl.
- Add the egg, flour, salt, and pepper to the bowl. Mix until just combined. Do not overmix.
- Preheat your air fryer to 400°F (200°C).
- Lightly brush the air fryer basket with some vegetable oil.
- Form the potato mixture into small patties, about 2 inches wide and 1/2 inch thick.
- Place the latkes in the air fryer basket in a single layer, ensuring they do not touch. You may need to cook them in batches.
- Brush the tops of the latkes lightly with the remaining vegetable oil.
- Air fry for 10 to 12 minutes, flipping them halfway through, until they are golden brown and crisp.
- Serve immediately with your preferred toppings.
Notes
- For extra crispiness, you can rinse the grated potatoes in cold water after grating and dry them thoroughly before mixing.
- If you do not have Russet potatoes, Yukon Gold potatoes work as a substitute.
