Description
A quick one-pan meal combining ground beef, zucchini, and taco seasoning.
Ingredients

- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 medium zucchini, chopped
- 1 packet (1 ounce) taco seasoning mix
- 1 cup water
- 1 cup shredded cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and onion to the skillet. Cook until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain any excess fat.
- Stir in the chopped zucchini and taco seasoning mix. Cook for 3 minutes.
- Pour in the water. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, or until the zucchini is tender.
- Remove the skillet from the heat. Sprinkle the shredded cheese over the top. Cover the skillet for 2 minutes to allow the cheese to melt.
- Serve immediately.
Notes
- Serve this skillet mixture in taco shells or over rice for a complete meal.
- You can substitute ground turkey or chicken for the ground beef.
