- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 2 teaspoons matcha powder
- 1 tablespoon fresh lime juice
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together the flour, baking soda, and salt in a small bowl. Set aside.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Stir in the lime zest and matcha powder until just incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the lime juice. The dough will be slightly soft.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9 to 11 minutes, or until the edges are set.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger lime flavor, add a light lime glaze after the cookies cool.
- Sift the matcha powder before adding it to the batter to prevent lumps.
