  • 12 ounces white chocolate, melted and slightly cooled

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside bottom of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a small bowl. Press the mixture firmly into the bottom of the prepared springform pan.
  3. Beat the softened cream cheese in a large bowl with an electric mixer until smooth. Gradually add 1 1/2 cups sugar and vanilla extract, beating until combined.
  4. Beat in the eggs one at a time, mixing just until incorporated after each addition.
  5. Gently stir in the melted white chocolate until just combined. Do not overmix.
  6. Pour the batter over the crust. Place the springform pan inside a larger baking pan. Fill the larger pan with hot water halfway up the side of the springform pan to create a water bath.
  7. Bake for 50 to 60 minutes, or until the edges are set and the center has a slight jiggle.
  8. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  9. Remove the cheesecake from the water bath and let it cool completely on a wire rack.
  10. Chill in the refrigerator for at least 6 hours, or preferably overnight, before serving.
