A simple recipe for a classic Southern strawberry cobbler with a sweet biscuit topping.

- 4 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1/2 cup milk
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
- In a bowl, toss the sliced strawberries with 1/2 cup of the sugar and the lemon juice. Let stand for 10 minutes.
- Pour the strawberry mixture into the prepared baking dish.
- In a separate bowl, whisk together the remaining 1/2 cup sugar, flour, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk until just combined to form a soft dough. Do not overmix.
- Drop spoonfuls of the dough evenly over the top of the strawberries.
- Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the cobbler cool slightly before serving.
Notes
- Serve warm with vanilla ice cream or whipped cream.
- If your strawberries are very large, cut them into quarters instead of slices.
- You can use frozen strawberries; thaw them first and drain off excess liquid before mixing with sugar.
