Description

Make these easy oat bars with a sweet strawberry filling.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup strawberry jam or preserves

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8×8 inch baking pan.
  2. In a medium bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt.
  3. Pour the melted butter over the dry ingredients and mix until just combined.
  4. Press two-thirds of the oat mixture evenly into the bottom of the prepared pan.
  5. Spread the strawberry jam evenly over the oat base.
  6. Crumble the remaining one-third of the oat mixture over the jam layer.
  7. Bake for 25 to 30 minutes, or until the topping is golden brown.
  8. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For a firmer bar, chill the baked bars for at least one hour before slicing.
  • You can use homemade strawberry compote instead of jam for a fresher flavor.
