Description

Simple recipe for sweet and tart strawberry crumb bars with a buttery crust and topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 1/2 cups fresh or frozen strawberries, chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the flour, rolled oats, brown sugar, and salt for the crumb mixture.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture evenly into the bottom of the prepared pan. Set the remaining one-third aside for the topping.
  5. In a separate bowl, gently mix the chopped strawberries, granulated sugar, cornstarch, and lemon juice.
  6. Spread the strawberry filling evenly over the crust layer in the pan.
  7. Sprinkle the reserved one-third crumb mixture over the strawberry layer.
  8. Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Cut into squares for serving.

Notes

  • If using frozen strawberries, do not thaw them before mixing with the other filling ingredients.
  • For a richer flavor, substitute 1/4 cup of the all-purpose flour with almond flour.
