Description

A simple recipe for a refreshing chia seed pudding made with coconut milk and fresh strawberries.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup full-fat coconut milk
  • 1 tablespoon maple syrup or sweetener of choice
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced or chopped

Instructions

  1. In a jar or bowl, combine the chia seeds, coconut milk, maple syrup, and vanilla extract.
  2. Stir well to mix all ingredients. Let it sit for 5 minutes, then stir again to break up any clumps.
  3. Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens.
  4. Before serving, stir the pudding. If it is too thick, add a splash more coconut milk.
  5. Top the pudding with the sliced or chopped fresh strawberries.

Notes

  • For a thinner consistency, increase the amount of coconut milk slightly.
  • You can layer the strawberries within the pudding instead of just topping them.
