Description

A simple, hearty beef and sweet potato stew made easily in a slow cooker.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 large sweet potatoes, peeled and cubed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for slurry)

Instructions

  1. Place the beef cubes, onion, garlic, sweet potatoes, diced tomatoes, beef broth, Worcestershire sauce, thyme, salt, and pepper into the slow cooker.
  2. Stir all ingredients together until combined.
  3. Cover the slow cooker and cook on low for 7 to 8 hours or on high for 3 to 4 hours, until the beef is tender.
  4. About 30 minutes before serving, stir the cornstarch and water mixture into the stew.
  5. Continue cooking on high, uncovered, until the stew thickens slightly.
  6. Serve hot.

Notes

  • You can substitute regular potatoes for sweet potatoes if desired.
  • For a richer flavor, brown the beef cubes in a skillet before adding them to the slow cooker.
