A straightforward recipe for classic Shepherd’s Pie with a ground meat base and a mashed potato topping.

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 pound ground lamb or beef
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1/2 cup frozen peas
- 2 pounds potatoes, peeled and cut for mashing
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Heat olive oil in a large oven-safe skillet over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add ground meat to the skillet. Cook, breaking it up, until browned. Drain excess fat.
- Stir in flour, then add beef broth and tomato paste. Add thyme, salt, and pepper. Bring to a simmer and cook until the sauce thickens, about 5 minutes. Stir in frozen peas.
- While the meat cooks, boil potatoes until tender. Drain well. Mash the potatoes with milk and butter until smooth. Season with salt and pepper.
- Spread the mashed potatoes evenly over the meat mixture in the skillet. Use a fork to create texture on top.
- Bake for 20 to 25 minutes, or until the topping is golden brown and the filling is bubbly.
Notes
- For a richer flavor, use lamb instead of beef.
- You can prepare the meat filling a day ahead and refrigerate it.
- If your skillet is not oven-safe, transfer the filling to a baking dish before topping with potatoes.
