A recipe for preparing crispy, seasoned fried green tomatoes.

- 2 large green tomatoes
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 2 large eggs
- 1/4 cup milk
- Vegetable oil for frying
Instructions
- Slice the green tomatoes into 1/4-inch thick rounds.
- In one shallow dish, whisk together the flour, cornmeal, salt, pepper, paprika, and cayenne pepper.
- In a second shallow dish, whisk the eggs and milk together.
- Dip each tomato slice first into the egg mixture, letting excess drip off.
- Next, dredge the slice thoroughly in the flour mixture, pressing lightly to coat.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until hot (about 350°F).
- Carefully place the coated tomato slices in the hot oil, working in batches to avoid crowding the pan.
- Fry for 2 to 3 minutes per side, until golden brown and crisp.
- Remove the tomatoes with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve immediately.
Notes
- For extra crispiness, you can double-dip the tomatoes: coat in flour mixture, then egg, then flour mixture again.
- Adjust cayenne pepper amount based on your preference for heat.
