A straightforward recipe for roasting Mahi Mahi fillets with lemon and herbs.

- 2 Mahi Mahi fillets (about 6 oz each)
- 1 tablespoon olive oil
- 1 lemon, sliced thinly
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Lightly grease a baking dish.
- Place the Mahi Mahi fillets in the prepared baking dish.
- Drizzle the olive oil over the fish.
- Season both sides of the fillets with salt and pepper.
- Place lemon slices, rosemary sprigs, and thyme sprigs on top of each fillet.
- Bake for 12 to 15 minutes, or until the fish flakes easily with a fork.
- Remove from the oven and serve immediately.
Notes
- You can substitute other firm white fish for Mahi Mahi.
- Use dried herbs if fresh herbs are not available; use half the amount specified.
