Quick Ground Beef and Potatoes Skillet

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 pound potatoes, peeled and diced into 1/2 inch pieces
  • 1 cup beef broth
  • 1/2 cup water
  • 1 tablespoon all-purpose flour

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, salt, pepper, and thyme. Cook for 1 minute until fragrant.
  5. Add the diced potatoes, beef broth, and water to the skillet. Bring the mixture to a simmer.
  6. Cover the skillet and reduce the heat to medium-low. Cook for 15 to 20 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
  7. In a small bowl, mix the flour with 2 tablespoons of cold water to create a slurry.
  8. Stir the slurry into the simmering mixture. Cook for 1 to 2 minutes, stirring constantly, until the liquid thickens slightly.
  9. Remove from heat and serve immediately.

Notes

  • You can substitute dried rosemary for thyme if you prefer a different flavor.
  • For extra flavor, add 1/2 cup of frozen peas or carrots during the last 5 minutes of cooking.
