Description
A simple, fast recipe for ground beef and potatoes cooked together in one skillet for an easy dinner.

- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 pound potatoes, peeled and diced into 1/2 inch pieces
- 1 cup beef broth
- 1/2 cup water
- 1 tablespoon all-purpose flour
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic, salt, pepper, and thyme. Cook for 1 minute until fragrant.
- Add the diced potatoes, beef broth, and water to the skillet. Bring the mixture to a simmer.
- Cover the skillet and reduce the heat to medium-low. Cook for 15 to 20 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
- In a small bowl, mix the flour with 2 tablespoons of cold water to create a slurry.
- Stir the slurry into the simmering mixture. Cook for 1 to 2 minutes, stirring constantly, until the liquid thickens slightly.
- Remove from heat and serve immediately.
Notes
- You can substitute dried rosemary for thyme if you prefer a different flavor.
- For extra flavor, add 1/2 cup of frozen peas or carrots during the last 5 minutes of cooking.
