Simple recipe for moist banana muffins made with added protein powder.

- 2 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/4 cup milk (dairy or non-dairy)
- 1/4 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1/2 cup vanilla protein powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, mix the mashed bananas, applesauce, milk, maple syrup, egg, and vanilla extract until combined.
- In a separate medium bowl, whisk together the flour, protein powder, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can use any flavor of protein powder, but vanilla works best for a neutral taste.
- For extra texture, fold in 1/4 cup of chopped walnuts or chocolate chips before baking.
