Description

Simple, no-bake bars made with a peanut butter cookie dough base and topped with chocolate chips.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, beat the softened butter, brown sugar, and peanut butter until smooth.
  3. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Press the dough evenly into the bottom of the prepared pan.
  7. Sprinkle the chocolate chips over the top of the dough and gently press them in slightly.
  8. Refrigerate for at least 2 hours, or until firm enough to cut.
  9. Lift the bars out of the pan using the parchment paper overhang and cut into squares.

  • You can use crunchy peanut butter if you prefer texture in your bars.
