  • 1 cup butter, softened
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon shortening

Instructions

  1. Line a 9×13 inch pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, beat the softened butter, peanut butter, and vanilla extract until smooth.
  3. Gradually add the powdered sugar, mixing until fully combined. The mixture will be thick.
  4. Press the peanut butter mixture evenly into the prepared pan.
  5. In a microwave-safe bowl, combine the chocolate chips and shortening. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
  6. Pour the melted chocolate mixture over the peanut butter layer and spread evenly.
  7. Refrigerate for at least 2 hours, or until the chocolate is firm.
  8. Lift the bars out of the pan using the parchment paper overhang. Cut into squares before serving.

Notes

  • Use room temperature butter for easier mixing.
  • If you do not have shortening, you can substitute with 1 tablespoon of coconut oil for the chocolate topping.
